Chicken Tacos
"I just want to taco
bout happy things."
I love tacos. They're so easy to make and surprisingly light, yet still
filling. You can never go wrong with a quick taco recipe, and this one comes
together so fast that it'll save you when you don't know what to make or
when you're tight on time.
Having taco shells in your cupboard is a lifesaver, and this is a great way
to use up all the leftover salad ingredients in the fridge or the leftover
meat from a previous meal.

Ingredients
Filling:
5 - 6 Chicken Fillets
1 Tbsp Red Chilli Paste
1 tsp Red Chilli Powder
1/2 tsp Cumin Powder
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1 Tbsp Freshly Crushed Garlic
1/4 tsp Salt (to taste)
1/2 tsp Dry Parsley
1 tsp Paprika
1 Lime - Juice
2 Tbsp Olive Oil
Salad:
Sliced Cucumber
Chopped Lettuce
Sliced Jalapenos
Freshly Chopped Coriander
Sliced Baby Tomatoes
Sliced Purple Onions

Method With Step-by-Step Pictures
1. Cut the chicken fillet into cubes.
2. Add all the spices to the chicken and mix it all together.
3. Add the olive oil to a pot and heat on medium for a minute before adding
the chicken. Let it brown on each side for 2 - 3 minutes before adding 1/2
cup of water (do not add too much). Turn the heat to high and let it boil,
then reduce it to medium-low and leave the chicken to cook for 15
minutes.
4. Cook till the chicken is done; it should not be watery.
5. Once done, start by heating up the taco shells according to the
packaging.
6. Finally, build the tacos. Add the chicken and prepared salad, then
drizzle with chipotle sauce (recipe
here) and squeeze with lime juice before serving.
Method
