Ramadan Mubarak!
As we enter the blessed month of Ramadan, our hearts are filled
with excitement and gratitude for this sacred time of reflection,
spiritual growth, and devotion. Ramadan is a time to fast
from dawn to sunset and an opportunity to strengthen our
connection with Allah (God), purify our hearts, and ground
ourselves spiritually. It's a month of heightened devotion, prayer,
and good deeds—a month every Muslim eagerly awaits.
This is a time to remember the struggles of those facing hunger,
poverty, war, or oppression. Ramadan is an opportunity to grow in empathy and gratitude for our
blessings, to be big-hearted and not wasteful. It teaches compassion and encourages
kindness, generosity, and service to others.
Charity is especially encouraged during Ramadan. No matter how small, every good deed is magnified, and Allah's mercy is abundant, especially this month. Every act of kindness and generosity this
month brings greater rewards and is a great way to cultivate
better habits.
Fasting also has numerous scientific benefits, enhancing physical health, mental clarity, and spiritual well-being.
As we embark on this month of reflection, gratitude, and charity, let
us also remember to keep those being tested worldwide in our thoughts and prayers,
offering support and love in any way we can. May this Ramadan bring
peace, joy, and spiritual growth.
Now, let's get back to this easy recipe!
This 3-Ingredient Dough is super easy to make—it literally has three
ingredients (if we minus the toppings)! It's also an excellent way to use up
any Greek yoghurt you may have in the fridge, while adding more protein into your diet.
OTHER 3-INGREDIENT DOUGH USES

You can make
plain dinner rolls, burger buns or sliders. You can also make stuffed rolls like I
did and change the stuffing to whatever options you have, such as
other cheeses or meats. Another option for this 3-Ingredient Dough is
to make pizza, calzones, or flatbread.
Quick Note
- This recipe yeilds 1 large pizza/calzone. Depending on how big you'd like your dinner rolls or stuffed rolls, you can make approximately 12 burger-size buns and 24 small rolls (like the ones in the picture).
- As you mix the ingredients to form the dough, if it's coming together and seems too dry or sticky, you may need to add more flour or Greek yogurt. Do not add too much or immediately; first, knead the dough, ensuring all the ingredients are combined.
- Leaving it to rest before rolling is a must, 15 - 30 minutes.
INGREDIENTS
Dough:
2 Cups All-Purpose Flour (you can also use brown flour)
2 tsp Baking Powder
1 1/4 Cup Greek Yoghurt
Other:
1/3 Cup Butter
1 Tbsp Crushed Garlic
1 tsp Dry Parsley
or
Herby Garlic Butter
1 Tbsp Za'atar
1/2 tsp Sumac
1. Preheat the oven to 200 Degrees C, and grease a baking tray.
2. Combine the flour, baking powder, and Greek yoghurt in a mixing bowl. Mix until the ingredients are combined, forming a smooth ball of dough. If the dough seems too dry or sticky, you may need to add more flour or Greek yogurt. Do not add too much or immediately; first, knead the dough, making sure all the ingredients are combined.
3. Leave the dough to rest for 15 - 30 minutes.
4. Transfer the dough to a floured surface and roll it into a large, even
circle. Now, if you're making pizza, calzones, or anything else with this
dough recipe, you would not continue the other steps except determining how
long to bake it.
5. Using a sharp knife or pizza cutter, make horizontal and vertical cuts
through the dough to create a grid of small squares (about 2-3 inches
wide).
6. Place a spoonful of grated cheese in the centre of each square.
7. Carefully fold the edges of each square corner over the cheese, bringing the
sides together to enclose the filling. Pinch them to seal each roll
securely till you're left with a dough ball, adding them to the lined
baking pan.
8. In a separate bowl, melt butter, dry parsley, and crushed garlic.
Generously brush the herby garlic butter over the rolls.
9. Next, top with Za'atar and Sumac.
10. Pop the rolls into the oven and bake for 15 - 20 minutes, until the
rolls turn nice and golden.
11. Finally, serve it while it's hot and enjoy!
METHOD

This is one of those recipes you can meal prep in advance, especially with
the Asian Slaw. It's delicious and light, which is perfect in this heat.
It's a great on-the-go lunch to have ready. You can change it up and even
throw in some egg noodles.
This is not the traditional recipe; it is my interpretation of it. Next time, I will cut the chicken into medium-large cubes or strips, which will make it more aesthetically pleasing when plated.
Teriyaki Chicken TikTok
Ingredients
5 - 6 Chicken Breasts (Cut into medium-large cubes or strips)
1 - 2 Tbsp Red Chili Paste
1/2 tsp Ground Ginger
1/2 tsp Crushed Garlic
1/4 tsp Salt
1/4 tsp Pepper
2 Tbsp Oil
1 - 2 Sliced Green Chilies
1 Cup Teriyaki Sauce (Recipe Link - Click Here)
3 - 4 Tbsp Low Sodium Soy Sauce
1/2 Cup Water
1 Tbsp Sesame Seeds
1/4 Cup Fresh Spring Onions - Chopped
Serve With
Egg Noodles or Rice

Method With Step-By-Step Pictures
1. Marinate the chicken (which you can cut into large cubes or strips—I will do that next time) in red chilli paste, ground ginger, salt, pepper, and crushed garlic.
2. Heat a medium-large pot with 2 tbsp oil on medium-high heat. After 1 - 2 minutes, add the marinated chicken. Brown each side for 2 - 3 minutes until it turns golden brown. Cook on low heat for 15 - 20 minutes (depending on the size of the chicken pieces).
3. Remove from the pot and keep aside once it's cooked.
4. Heat the leftover oil and sliced green chillies in the same pot on medium heat. Cook for 1 minute or until the chillies soften.
5. Next, pour the teriyaki sauce, soy sauce and water. Leave it to simmer on medium-low heat till it starts to bubble, for around
2 - 3 minutes.
6. Next, add back in the chicken. Continue to cook on low heat for 5
minutes. Watch the sauce not burn or dry out; if it's too thick, add more water to thin it out.
7. When serving, garnish with freshly chopped spring onions and sesame
seeds, and serve with rice or noodles and the Asian Slaw.
Method Without Pictures

Teriyaki Sauce
"Teriyaki, my heart away."
Teriyaki Sauce is an excellent addition to many recipes and pairs
beautifully with soy sauce. So, if you want to add more flavour to your
Asian-inspired dishes, you can use some Teriyaki Sauce.
Depending on where you are, finding a Halal-certified or non-alcoholic bottle of Teriyaki Sauce can be extremely difficult. Well, it is for me.
I found it once and never again. I had a bottle in the
fridge, so if you come across this brand, it's Halal and
Non-Alcoholic.
This recipe makes approximately 2 Cups of Teriyaki Sauce. You can make a large batch and store it in the fridge.
This Teriyaki Sauce can be prepped in advance. As mentioned, you can
make enough for one recipe or a larger batch. Depending on what you have on hand, it should be kept in an airtight bottle or jar and refrigerated. It can last up to two weeks in the fridge.
My following recipe uses this homemade
sauce for teriyaki chicken. While I use it in this recipe, you can also use it
on fish, beef, prawns, and other chicken recipes, like wings.
Teriyaki sauce can also be used in rice, stir-fries, noodles, ramen, and dumplings. It can also be used as a dipping sauce or as an addition to a homemade dipping
sauce or salad dressing. As you can see, the list is endless, so do not limit
yourself to experimenting in the kitchen with it.
What Is Mirin, And Is It Halal?
Teriyaki Sauce commonly contains Mirin, so finding a Halal-certified
or non-alcoholic brand is quite tricky—well, on my side of the world, it
is.
Mirin is a type of rice wine commonly used in Japanese
cooking. It commonly has a low alcohol content and a higher sugar content. However, it is not
the same as rice vinegar. As mentioned, Mirin is sweet and contains alcohol, whereas rice vinegar is sour and acidic and has no alcohol.

permissible to ingest, regardless of the quantity or if it burns out
during the cooking process. I'm not here to have debates or ease anyone's

Teriyaki Sauce TikTok
Ingredients
1 Cup Water
1/3 Cup Low Sodium Soy Sauce
1 Tbsp Ground Ginger
1 1/2 tsp Crushed Garlic
4 - 5 Tbsp Brown Sugar (adjust depending on your sweet preference)
1/2 tsp Chili Flakes (optional)
1/2 Cup Cold Water
2 Tbsp Corn flour
Method With Step-By-Step Pictures
1. Add low-sodium soy sauce, 1 cup water, ground ginger, crushed garlic, brown sugar (adjust according to your sweetness preference), and chilli flakes to a saucepan. Heat on high heat for 2 - 3 minutes. The chilli flakes are optional, but I like the extra heat, which helps balance the sweet flavour.
2. Once your mixture starts to heat up and slowly
bubbles on the sides, turn the heat down to medium-low before adding in the slurry you made. The slurry is a fancy
word for the corn flour and water mixture. Mix the corn flour and cold water until they are combined and there are no lumps. This will help
thicken the sauce.
3. The slurry will lighten the sauce colour. Don't panic; that's normal. It will darken as the sauce thickens.
4. Let it simmer until it thickens and turns glossy. This should take 4 - 5 minutes at most. If it is too thick, you can thin it out with water, but only add a little, around 1 - 2 Tbsp (note: I did not thin mine).
5. Let it cool, then mix it quickly before bottling and storing it in the fridge.
