"Red card to boring snacks" 🟥⚽
The baked version of these loaded nachos had my brother-in-law
literally scraping the pan clean at the end of our braai (BBQ), so
it's safe to say my chef ego received a little boost! They were an
absolute hit and quickly became one of those recipes everyone kept
going back for. Crispy, creamy and packed with flavour, these loaded
nachos are guaranteed to disappear fast.
One of the best things about this loaded nachos recipe is how
versatile and customisable it is. It's the perfect “use what you have”
dish that can easily be adapted to suit your preferences or whatever
is already in your fridge. Add shredded chicken, leftover braai (BBQ)
meat, spicy mince or even extra beans to make it more filling.
You can also get creative with the toppings and sauces. Add fresh
guacamole, salsa, jalapeños, sweet chilli sauce or swap the peri-peri
sauce for your favourite hot sauce. Experiment with different tortilla
chips or flavoured nachos to create a new version every time you make
it - I like a mix between sweet chilli and flaming hot.
What I love most is that this recipe can be enjoyed in two ways.
Serve it as a chilled loaded nacho platter for a quick and easy snack,
or transform it into a cheesy baked nacho dish by adding grated cheese
and popping it into the oven. Whether you're making it for match day, a
braai, movie night or a casual gathering, these loaded nachos are
always a crowd-pleaser.

Ingredients
400g Baked Beans
1 Diced Cucumber
1 Diced Green Bell Pepper
1 Diced Red Pepper
1 Diced Onion
1 Sliced Jalapeños - optional
250ml Sour Cream
2 -3 Tbsp Peri Peri Sauce
1/4 tsp Salt
1/4 tsp Black Pepper
1/2 tsp Dried Parsley
1/2 tsp Paprika
1/2 tsp Mixed Herbs
250g Tortilla Chips or Nachos
1 Cup Grated Mozzarella - optional
1 Cup Gouda Cheese - optional
Fresh Coriander

Method with Pictures
1. In a large mixing bowl, combine a tin of baked beans with all the
diced vegetables and mix well.
2. Add in salt and black pepper, and stir in the sour cream and peri-peri sauce until everything is evenly
coated and well combined. You can also add in the other herbs and spices for extra flavour.
3. Arrange your favourite tortilla chips or nachos on a serving platter,
spoon over the loaded creamy bean mixture, and finish with dollops of sour
cream and extra peri-peri sauce.
4. Garnish the loaded nachos with freshly chopped coriander and a
sprinkle of dried parsley before serving.
5. For cheesy baked loaded nachos, layer everything into a baking dish,
sprinkle generously with grated cheese, and bake in a preheated oven at
200°C until the cheese is melted.
